HIGH NUTRIENT BREAKFAST
Serves: Probably 2, or 1 if youre hungry
Ingredients:
POTATO HASH
-1 sweet potato
-1 Tbsp grape seed oil
-2 cloves garlic, minced
-A dump truck of cajun seasoning
SAUTED VEGGIES
-1/2 red onion, sliced
-10 grape tomatoes, halved lengthwise
-3 cilantro sprigs, finely chopped
BURRITO
-1 whole wheat tortilla
-1 scrambled egg (I used @justegg)
Directions:
-Place sweet potato hash ingredients together in a large pan on high heat. Stir continuously adding small splashes of water as needed to keep the potatoes from sticking to the pan.
-Transfer potatoes when ready to a separate plate and add the veggies to the pan. Stir until cooked and remove.
-Quickly scramble 1 egg/egg substitute
-Assemble burrito by adding the egg and equal parts potato hash and sauted veggies.
-Serve the remaining potatoes and veggies on the side!
