Comfort food at its finest plant based version!! By @kalememaybe Grilled Cheese with Roasted Red Pepper and Tomato Soup!!!
I based this recipe off of @carolinagelens tomato soup recipe, but just added red peppers because I am currently really obsessed with them and cant stop eating them.
I used sourdough for the grilled cheese and @violifefoods aged cheddar slices (but you can just use regular cheddar!) I just fried it up in some butter (again, can use regular or plant based. @montysnyc is a good plant based and same with @miyokoscreamery)
Soup Recipe (serves 4)
4 cups cherry tomatoes
2 large red peppers, cut into slices
1/2 yellow onion, cut into slices
1 small head of garlic, papery outer layers discarded and top sliced off
A few sprigs of thyme
1 cup full fat coconut milk
1 cup veggie broth
Salt and pepper, to taste
Preheat oven to 450 F. On a baking dish or baking sheet (you may need to use multiple), spread your tomatoes, peppers, onion, garlic evenly. Drizzle everything with olive oil, and season with salt and pepper. Top with a little bit of fresh thyme. Bake for 30 minutes until everything has softened.
Transfer everything to a blender (youll need to squeeze out the garlic into the blender, but let it cool slightly so you dont burn your fingers!). Add the coconut milk, veggie broth, and fresh basil (I used a handful). Blend until smooth, and season with salt and pepper if desired. Top with fresh basil and thyme (and a swirl of coconut milk, if youd like!)
